The author blames avian flu outbreaks on a selenium deficiency (from lack of it in feed and overproduction of eggs), acid rain ( which prevents plants from absorbing selenium) and probably some other factors I can't remember at the moment. He mentions which areas of the world have selenium-deficient soils.
Grains grown in selenium rich soils are a good source of selenium. Seafood is a reliable source. I'm guessing that seaweeds would be a good source, too.
