I'd be a hippo.
Not only do I love them (have a hippo tatoo), but I'd never have to worry about any other animals and I could eat all day long......and lounge in the water.

I would either be a dolphin, or an eagle. Of course, we all will probably pick a swimming/flying animal. I'd like to feel the wind on my face and look down. Or feel the cold water opening up to make space for me as I swiftly move through it!
